Ingredients
  1. 1/2 kg goat liver (bakray ki kaleji)
  2. oil as desired
  3. 4-5 cloves (laung)
  4. 1/2 tea spoon whole black pepper (sabat kali mirch)
  5. 1/2 tea spoon cumin seeds (sabat/safaid zeera)
  6. 2 green cardamoms (choti/ hari illaichi )
  7. 1/2 inch piece of ginger (adrak)
  8. 1/2 garlic (aadhi poothi lehsan)
  9. 1 medium to large size onion (piyaz)
  10. 1/2 tea spoon full salt
  11. 1/2 tea spoon full red chili powder
  12. 1/2 tea spoon full coriander powder (dhania)
  13. 1/4 tsp turmeric powder(haldi)
  14. اجزاء:
  15. کلیجی (بکرے کی) ------ آدھا کلو
  16. پیاز (سلائس کاٹ لیں) ----- دو عدد
  17. ادرک پیسٹ -----ایک چائے کا چمچ
  18. لہسن پیسٹ ----- ایک چائے کا چمچ
  19. سرخ مرچ پاؤڈر ----- ایک چائے کا چمچ
  20. ہلدی پاؤڈر ----- آدھا چائے کا چمچ
  21. دھنیا پاؤڈر ---- آدھا چائے کا چمچ
  22. گرم مصالحہ پاؤڈر ----- آدھا چائے کا چمچ
  23. سبز الائچی ----- تین عدد
  24. بڑی الائچی ----- ایک عدد
  25. لونگ ----- چار عدد
  26. ٹماٹر (چوپ کیے ہوئے) ------ دو عدد
  27. نمک ----- حسب ذائقہ
  28. دہی ----- آدھا کپ
  29. تیل ----- آدھا کپ
  30. ہری مرچیں (چوپ کی ہوئی) ----- دو عدد
  31. ہرا دھنیا (چوپ کیا ہوا) ---- آدھی گٹھی
Method
  • Put oil in pressure cooker put on medium heat and add sliced onions to get pink
  • Meanwhile crush the ginger and garlic.
  • When onion get pink color add 1cup water in it and put lid and give pressure for 3-4 min.
  • After 3-4 min when the pressure of cooker come down itself and then open and add ginger and garlic.
  • Roast and when water is all dried up add all the whole and ground spices and salt as well.
  • Roast it nicely until it appears as a paste and starts giving nice aroma and the oil separates.
  • Now add liver.
  • Cook on high heat, but if pink juices are still oozing out let it cook on low heat till its cooked from inside as well.
  • Remove it from flame when its just done,neither over nor under cook it, remove it from flame at the right time.
  • ترکیب:
  • کلیجی کو ہلدی ملے پانی سے دھو کر خشک کرنے کے لیے رکھ دیں- سوس پین مین تیل ڈال کر گرم کر کے بڑی الائچی٬ لونگ٬ سبز الائچی ڈال کر کڑکڑائیں- اب اس میں ادرک٬ لہسن پیسٹ ڈال دیں- ایک سے دو منٹ تک فرائی کر کے پیاز شامل کریں- پیاز کا رنگ سنہرا ہوجائے تو سرخ مرچ پاؤڈر٬ ہلدی پاؤڈر شامل کردیں- چمچہ چلاتی رہیں٬ دھنیا پاؤڈر ڈالیں- اب اس میں کلیجی ڈال کر بھونیں - ٹماٹر شامل کردیں دو سے تین منٹ تک چمچہ چلاتی رہیں - اب اس میں دہی ڈال کر نمک شامل کریں- دہی کا پانی خشک ہوجائے اور گریوی تیار ہونے پر دو سے تین منٹ تک دھیمی آنچ پر پکائیں- تیل اوپر آجائے تو گرم مصالحہ پاؤڈر چھڑک کر چولہے سے اتار لیں- ہرے دھنیے اور ہری مرچ سے گارنش کر کے سرو کرلیں-

Actually I want to make little bit gravy and Masala in kalejifor that how can I do? If I make according to the same way, obviously it is difficult to serve with five to six peoples. The ingredients which I am noting is already in my home.
