Haleem Recipe

Haleem recipe is a traditional dish originated from Mughal era. The dish is a part of Pakistani cuisine, which is typically liked by everyone. Haleem is a stew made with wheat, gram lentils, meat and spices generally made in Middle East. Haleem is usually prepared with full generosity as it is shared with your loved ones being the savor and time-honored dish.

The luscious and yielding taste will make you feel heavenly. The loaded ingredients are combined to form a mild texture that will make you delightful.

To cook Haleem recipe, you need to add garlic, turmeric powder, red chili powder, coriander powder and cook it then boil wheat grains and add meat with grain and lentil until they are stirred well. When the haleem is prepared, sprinkle all the onion, ground spices, fresh mint and coriander leaves. Serve it with garnished cumin and ginger. For the seasoning keep sliced lemon, fried onion, chopped ginger, mint leaves separately.

Ingredients
  1. Wheat grains (crushed and soaked in water for 1 1/2 hours) 1/2 kg
  2. Mutton or beef 1 1/2 kg
  3. Gram lentils (soaked and boiled) 1 cup
  4. Onions (thinly sliced) 3 medium
  5. Ginger and garlic paste 2 tbsp
  6. Garam masala (ground) 1 tsp
  7. Red chili powder 2 tbsp
  8. Coriander powder 1 1/2 tsp.
  9. Turmeric powder 1 tsp.
  10. Salt to taste.
  11. Banaspati Ghee 1 1/2 cups.
  12. Soda 1 pinch.
  13. Seasoning and Garnish:
  14. Fresh mint leaves (finely chopped) 1 bunch
  15. Fresh coriander (finely chopped) 1 bunch.
  16. Green chili (finely chopped)
  17. White cumin (roasted and ground) 1 tsp
  18. Garam masala (ground) 1 tsp
  19. Ginger (finely chopped) 2 medium pieces
  20. Onion (thinly sliced) 1 large sized
  21. Lemons (cut into quarters) 4.
  22. Banaspati Ghee 2 cups.
Method
  • Heat banaspati in a pan.Put meat in the pan.
  • Add garlic, garam masala, red chili powder, coriander powder, turmeric and salt.
  • Cook on medium heat. In a separate pan boil wheat grains with lots of water, add salt.
  • When the grains become tender and mushy add pinch of soda in it and cook further for 15-20 minutes.
  • Now mix the wheat grains with the meat and mix well.
  • Stir continuously so that both are mixed properly.
  • Now grind the lentils in a food processor.
  • Make it into a thick paste by adding 2 cups of water while processing it.
  • Pour the lentil paste into the meat and wheat mixture and stir to mix well.
  • Place the pan on a heavy griddle (tava) on low heat and cook for 30-40 minutes.
  • Fry the sliced onion in ghee and drain on absorbent paper.
  • When the Haleem is cooked, sprinkle fried onions, garam masala, fresh mint and coriander leaves.
  • Also garnish with cumin and ginger.
  • Keep a little of the seasoning separate and serve with Haleem.
