Ingredients
  1. Chicken leg pieces3
    Oil2 – 3 tbsp
    Boiled tomatoes2
    Pistachio ground50 gm
    Parmesan cheese100 gm
    Pine nuts50 gm
    Oregano½ tsp
    Parsley chopped¼ bunch
    Saltto taste
    Crushed black pepper1 tsp
    Chili powder1 tsp
Method
  • Cut drumsticks from chicken leg pieces, marinate chicken pieces with salt to taste, a little black pepper, 1 tsp chili powder and a little oil. Then put marinated chicken in an oven proof tray, bake in a preheated oven for 12 – 15 minutes.
    In a pan put together boiled ground tomatoes, ground pistachios, pine nuts, chopped parsley, salt to taste, crushed black pepper and ½ tsp oregano. Cook for a few minutes.
    Then turn the flame off. Spread sauce in a serving platter. Top with chicken pieces.
    Lastly spread parmesan cheese and chopped parsley on top. Serve hot.
