Ingredients
  1. Wholemeal pasta spirals 250 g
  2. Anchovies 6 canned
  3. Black olives 12
  4. Canned tuna, drained 220 g
  5. Fresh parsley 1 tbsp
  6. Snipped fresh chives 1 tbsp
  7. Egg boiled 1
  8. Mustard Dressing
  9. Dijon mustard 1 tbsp
  10. Wine vinegar 1 tbsp
  11. Olive oil ¼ cup
  12. Black pepper
Method
  • • Cook pasta in boiling water in boiling water in a large saucepan following packet direction drains, rinse under cold running water. Then drain again and set aside to cool completely.
  • • Cut anchovies in alf lengthwise wrap an anchovy strip around each olive. place pasta, anchovy-wrapped olives tuna, parsley and chives in a salad bowl
  • • To make dressing, place mustard garlic vinegar, oil and black pepper to taste in a screwtop jar and shake well pour dressing over salad and toss to combine.
