Ingredients
  1. Tortellini 500 g
  3. avocado cream
  4. avocado, stoned and peeled ½ ripe
  5. cream 2 oz
  6. parmesan cheese 30 g
  7. lemon juice 1 tbsp
  8. black pepper
Method
  • • Cook tortellini in boiling water in a large sauce pans following packets direction, Drain set aside keep warm.
  • • To make avocado cream, place avocado, cream parmesan cheese and lemon juice in a food processor or blender and process until smooth. Season to taste with balck pepper.
  • • Place tortellini in a warn serving bowl, add avocado cream and toss to combine. Serve
