Ingredients
  1. 1 lb. courgettes
  2. Oil for frying
  3. 1 onion
  4. 1 teaspoon crushed dried prawns
  5. 2 teaspoons chili powder
  6. ¼ oz. tamarind, soaked in
  7. 1 tablespoon hot water
  8. ¼ -inch slice creamed coconut salt to taste
  9. * Soak tamarind in hot water for 20 minutes. Squeeze the husk and strain the liquid.
Method
  • Slice the courgettes and fry in a little oil until golden. Drain and set aside. Slice the onion and fry along with the crushed prawns until soft. Add the chilli powder, courgettes, tamarind water, coconut and salt. Cook for 20 minutes, stirring constantly. Serve with rice.
  • Note: Preparation time 20 minutes, Cooking time 30 minutes, To serve 4
