Ingredients
  1. 8 oz. semolina
  2. 2 large onions
  3. 2 green chillis
  4. 2 oz. cashew nuts
  5. 1 oz. butter
  6. 3 tablespoons oil
  7. 1 teaspoon mustard seeds
  8. 1 ½ teaspoons black gram dhal
  9. 1 tablespoon chopped coriander leaves
  10. ½ pint (U.S. 11 cups) water
  11. ½ teaspoon ground cinnamon ½ teaspoon ground cloves
  12. juice of 2 lemons
  13. salt to taste
Method
  • Put the semolina on a baking sheet and brown it in a hot oven. Set aside when ready. Meanwhile, chop the onions, chillis and cashew nuts. Heat the butter and oil in a saucepan. Add the mustard seeds and fry until they crackle. Put the dhal and cashew nuts into the pan and fry for a minute. Add the onions and coriander leaves. Cook for five minutes. Add half the water together with thc remaining ingredients, except the semolina. Stir and cook for one minute then add the remaining water and cook for a further 15 minutes, stirring occasionally. Gradually sprinkle in the semolina and cook for five minutes stirring constantly. Add more water if mixture is too dry. The result will be a thick paste. Cover the saucepan with a tight-fitting lid and cook gently until the mixture dries out. Remove lid and allow the steam to evaporate. Serve piping hot with coffee.
