رس گلے (INGREDIENTS)

دودھ آدھ لیٹر
چینی آدھ کلو
نائٹرک ایسڈ ایک چٹکی یا لیموں کارس
چاول آدھ پاؤ

METHOD

دودھ کو چولہے پر چڑھا دیں، پکنے لگے تونائٹرک ایسڈ یا لیموں کا رس تھوڑا سا ڈال دیں یونہی پکنے دیں۔ دودھ پھٹ جائے تو اتارلیں۔ کپڑے میں انڈیل کر لٹکا دیں تاکہ پانی نچڑ جائے اور پھٹکیوں کا پنیر بنا لیں۔چاول صاف کر کے دو گھنٹے تک بھگوئے رکھیں۔ نتھار کر پیس لیں۔ چاولوں کے آٹے اور پنیر کو گھنٹے بھر تک گوندھتے رہیں اور خوب یک جان کر لیں۔ گوٹ نما بنا لیں۔ چینی میں ایک پاؤ پانی ڈال کر پکائیں۔ ایک تار پر چاشنی بنے تو رس گلے ملا دیں اور پکنے دیں۔ نرم ہو جائیں تو اتار لیں۔ شیرہ ڈونگے میں نکال لیں اور اس میں رس گلے ڈال لیں۔
