Ingredients
  1. • 4 medium-sized mangoes water
  2. • ½ teaspoon turmeric powder teaspoon
  3. • ½ chilli powder
  4. • 2 green chillis
  5. • 1 pint buttermilk
  6. • 2 oz. creamed coconut salt to taste
  7. • oil for frying
  8. • 1 teaspoon mustard seeds small bunch curry leaves or 2 bay leaves
  9. • 2 dry red chillis
Method
  • Peel the mangoes and cut into quarters. Put into a pan with the stones and a little water. Add turmeric and chilli Towder and simmer till mangoes are tender. Meanwhile mince the green chillis finely and add to the mangoes along with the buttermilk, coconut and salt. Bring to the boil and remove from the heat. In a small pan fry the mustard seeds, curry leaves and dry chillis. Add to the curry and serve with plain boiled rice.
