Mustard Almond Chicken Salad

Ingredients:

Boiled chicken 250 gm
Roasted almond 125 gm
Green capsicum 1
Ice berg 1
Carrot 2
Black pepper ¼ tsp
Mustard paste 2 tsp
Vinegar 2 tbsp
Mayonnaise 6 tbsp
Salad leaves as required
Salt to taste

Method:
Boil 250 gm chicken and cut into small cubes, also cut 1 capsicum and 2 carrots in slices. Chop 1 piece of ice berg or salad leaves. In a bowl put together chicken cubes and all the vegetables. Mix well.
Add 6 tbsp mayonnaise, 2 tsp mustard paste, ¼ tsp black peeper, 2 tbsp vinegar and salt to taste. Mix well. Now put this mixture in a platter, garnish with salad leaves. Top with 125 gm roasted almonds. Serve chilled.
