Ingredients
  1. 1 duck or chicken, cut into pieces oil for frying .
  2. 6 medium-sized onions
  3. 2-inch fresh root ginger
  4. 3 green chillis
  5. 3 cloves garlic
  6. FOR THE MASALA
  7. 1 teaspoon chilli powder
  8. 2 tablespoons ground coriander seeds
  9. 2 teaspoons ground cummin seeds 1 teaspoon ground cloves
  10. ½ teaspoon ground cardamoms
  11. ½ teaspoon ground cinnamom
  12. 1 teaspoon turmeric powder
  13. ¾ pint (U.S. 2 cups) vinegar
  14. Salt to taste
Method
  • Fry duck or chicken pieces in a little oil until golden brown. Keep aside. Slice onions, ginger and green chillis, crush the garlic and fry for five minutes. Combine the ingredients for the masala with enough vinegar to make a paste, add to the ingredients in the pan and fry for a further 10 minutes. Add the duck and mix well. Add the remaining vinegar and the salt and cook on a low heat till tender.
