Ingredients
  1. • 2 onions
  2. • 2 cloves garlic
  3. • 2 green chillis
  4. • Oil for frying
  5. • 1 teaspoon ground cummin seeds
  6. • ¼ pint (U.S. 2/3 cup) water
  7. • 1 tablespoon rice flour, mixed with
  8. • 2 tablespoons water four 8 oz. cod steaks salt to taste
  9. • 3 tablespoons vinegar
  10. • 2 eggs
  11. • 2 teaspoons sugar
  12. FOR THE GARNISH
  13. • chopped coriander leaves
Method
  • Slice onions, finely mince garlic and chillis. Heat a little oil in a saucepan, add the onions and fry till brown. Add the garlic, chillis and cummin; cook for five minutes. Pour water into the pan, bring to the boil and simmer for 10 minutes. Add the rice flour-paste and continue to cook until the gravy thickens. Add the fish and salt; cook till tender. Remove the pan from the heat. Beat the vinegar, eggs and sugar together and pour over fish. Re-heat without boiling. Garnish with chopped coriander leaves.
