Ingredients
  1. - 1 tsp. lemon rind
  2. - juice of 1/2 lemon
  3. - 1\2 cup water
  4. - 1/4 cup sugar
  5. - 2 tbsp. clear honey
  6. - 2 cloves
  7. - 1\2 cup walnuts
  8. - 15 fresh figs or canned figs, drained
  9. - 1/2 cup plain yogurt
  10. - 1/4 tsp. vanilla
  11. - chopped walnuts
Method
  • 1. Put sugar, lemon rind, lemon juice, honey and cloves in a saucepan. Bring to boil, stir until the sugar has dissolved. Boil rapidly for 5 minutes or until the syrup is thick and bubbly. Remove from heat, discard the cloves and lemon rind. Keep aside to Cool.
  • 2. Insert one walnut half into each fig. Divide the figs between individual dishes.
  • 3. Stir together cooled syrup, yogurt and vanilla extract. Spoon the yogurt mixture over figs. Cover and chill for 3 hours, then decorate with chopped walnuts.
  • 4. Makes 5 servings.
