Ingredients
  1. 4 oz. plain flour
  2. ½ teaspoon baking powder
  3. ½ teaspoon vanilla essence
  4. 2 tablespoons desiccated coconut, soaked in
  5. a little milk
  6. 2 large bananas
  7. 1 egg, whisked with 1 tablespoon sugar ghee or oil for frying
Method
  • Sieve flour and baking powder into a mixing bowl. Add vanilla essence, strained coconut milk and mashed bananas. Mix well. Beat in the whisked egg and sugar. If necessary add water to make a smooth, medium-thick batter. Heat a little ghee or oil in a pan and drop in spoonsful of batter. Cook the fritters till golden on both sides. Serve immediately.
