Ingredients
  1. Eggplant 250g
  2. Yogurt 250g
  3. Minced garlic 1tbsp
  4. Crushed red chili 1/2tsp
  5. Cumin 1tsp
  6. Salt 1/2tsp
  7. Green chilies 2
  8. Coal 1
  9. Lemon juice 1
  10. Lemon juice 2tbsp
  11. Onions 1
  12. Oil 2tbsp
Method
  • 1. Bake the 250g of egg plant in an oven until it tenders.
  • 2. Allow the eggplant to cool, peel and mash.
  • 3. Heat 2tbsp oil in a skillet and fry 1tbsp minced garlic until its aroma is given off,
  • 4. Add 1 chopped onion,1/2tsp 1/2tsp crushed red chili powderand 1/2tp salt.Mix well and turn the flame off.
  • 5. Add the mashed eggplant,1tsp cumin, and 2tbsp lemon juice.Mix well.
  • 6. Add 2 green chilies and 2tbsp of chopped coriander.
  • 7. Lower a hot coal into the skillet and cover
  • 8. The baingan ka bhurta is ready to serve.
