Ingredients
  1. 1 medium-sized chicken (disjointed)
  2. 1/2 cup ghee
  3. 500 grams onions (sliced)
  4. 1 piece ginger (minced)
  5. 1 piece cinnamon stick
  6. 2 large cardamoms
  7. 2 bay leaves
  8. 6 cloves
  9. a few peppercorns
  10. 6 curry leaves
  11. 12 mint leaves
  12. 2 large handfuls coriander leaves (chopped)
  13. 200 grams tomatoes (blanched and sliced)
  14. 1 large cup sour curd
  15. 2 thIsps garam masala
  16. 1 thIsp each of powdered
  17. coriander and cumin seeds
  18. 6 green chillies (minced)
  19. 1 tsp turmeric powder
  20. salt and chilli powder to taste
Method
  • Heat the ghee and fry the onions, ginger and whole spices till the onions turn soft. Add the chicken and fry to a rich red color. Mix in all the remaining ingredients (with the exception of a few coriander leaves). Cover tight and cook till the chicken is soft. Serve hot, garnished with fresh coriander leaves.
