Kurkhay recipe by Chef Zakir. This delightful Main Course recipe of Kurkhay can be ready in approximately 30 Minutes and good to serve around 2-4 People. Follow all the steps recommended by Chef to get a perfect dish. Hide

INGREDIENTS

Red beans boiled½ kg
Onion2
Tomatoes3
Chili powder2 tsp
Saltto taste
Turmeric1 tsp
Coriander powder1 tsp
Cumin seeds1 tsp
Oil1cup
Ginger garlic paste1 tsp
Ingredients for Yogurt Dip
Yogurt250 gm
Coriander leaves1 bunch
Mint leaves1 bunch
Green chilies4 – 5
Garlic12 cloves
Ingredients for Tamarind Dip
Tamarind pulp125 gm
Cumin seed1 tsp
Chili powder½ tsp
Saltto taste
Ingredients for Garnish
Onion chopped1
Tomatoes2
Coriander leaves¼ bunch
Green chilies chopped2 – 3

METHOD

Soak red beans overnight, then boil with water as required till tender.
For gravy heat 1 cup oil, add in 2 chopped onion and sauté till golden brown. Now add 1 tsp ginger garlic paste and fry well.
Now add 2 tsp chili powder, salt to taste, 1 tsp turmeric, 1 tsp coriander powder and 1 tsp cumin seeds. Fry well.
Now add 3 chopped tomatoes and fry till oil comes on top.
Add in 2 cup water and cook for a few minutes, add boiled red beans, cook till gravy thickens.
Then add 1 chopped onion, 2 chopped tomatoes, ¼ bunch of coriander leaves and 2 – 3 chopped green chilies.
Serve with chutney.
Method for Yogurt Chutney
Blend together 1 bunch of coriander leaves, 1 bunch of mint leaves, 4 – 5 green chilies and 12 cloves of garlic. Blend very well.
Add it to 250 gm yogurt and mix well.
Method for Tamarind Chutney
In a bowl mix together 125 gm tamarind paste, 1 tsp cumin seeds, ½ tsp chili powder and salt to taste. Mix well.
