Wash and soak rice in water for 30 minutes. Mean-while, cut cauliflower into sprigs and slice onion finely. Fry the cauliflower in a little oil till nearly cooked and lightly brown. Drain and keep aside. Fry the cummin seeds for a minute or two till reddish-brown. Add onion and fry till brown. Drain rice and add to the spices, fry gently for three minutes then add the water, turmeric and salt._ Cook for five minutes, stir gently, then add the cauliflower. Cover and leave to cook till the water has evaporated and the rice is cooked. Serve with raw onion and cucumber salad.
