Ingredients
  1. 1) Brinjal 1/2 Kg Small size (prefrebly green).
  2. 2) Ginger garlic paste 1 tsp
  3. 3) Chilli powder 1 & 1/2 tsp
  4. 4) Salt 1 tsp
  5. 5) Cumin powder 1 tsp
  6. 6) Coriander powder 1 & 1/2 tsp
  7. 7) Brown onion Grinded 2 tbsp
  8. 8) Oil 3/4 cup
  9. 9) Peanuts 2 tsp
  10. 10) Coconut 1 & 1/2 tsp
  11. 11) Tamarind pulp 1/2 cup
  12. 12) Sesame seeds 1 & 1/2 tsp
  13. For Baghar
  14. 1) white cumin whole 1/2 tsp
  15. 2) Curry leaves 15
  16. 3) Fenugreek seeds 1/2 tsp
  17. 4) Onion seeds (kalongi) 1/2 tsp
Method
  • "1. Make 4 small cuts in the brinjals but don't separate them and keep
  • 2. them intact, including the stem.
  • 3. In a pot add cooking oil on medium heat and add the baghar to the pan (onion seeds, cumin seeds, fenugreek seeds and curry
  • 4. leaves)
  • 5. Then add the brinjals and stir fry for a couple of minutes and then take the brinjals out.
  • 6. Add a little water, ginger, garlic paste, red onion, coconut, peanuts, sesame seeds, and rest of the spices to the pan.
  • 7. Add the fried brinjals and cook for 1 minute.
  • 8. Finally add the tamarind pulp, cover and cook on very low heat for 10 minutes.
  • 9. And serve.
