Ingredients
  1. 4 oz. gram flour
  2. salt to taste
  3. pinch bicarbonate of soda water to mix
  4. oil for frying
  5. 3 cartons yoghurt
  6. 2 green chillis
  7. freshly ground black pepper 1 teaspoon cummin seeds
  8. ½ teaspoon mustard seeds 1 sprig curry leaves or
  9. 2 bay leaves
  10. FOR THE GARNISH
  11. 1 tablespoon coriander leaves
Method
  • Sieve flour, salt and bicarbonate of soda into a bowl. Whisk in sufficient water to make a medium batter. Heat some oil in a deep frying pan and fry the batter by letting it drop through the holes of a per¬forated spoon into the oil. Fry until golden brown and drain. Put the yoghurt into a serving bowl add the the fried batter balls, finely minced chilfis, pepper, curnmin seeds and salt. Fry the mustard seeds and curry leaves, add to the yoghurt and mix well. Garnish with chopped coriander leaves.
