Ingredients
  1. For the cake
  2. • Sugar 2tbsp
  3. • Crushed almonds 150g
  4. • Sugar 150g
  5. • Eggs 4
  6. • Plain flour 60g
  7. • Baking powder 1tsp
  8. • Butter 100g
  9. For the topping
  10. • Brown sugar 2tbsp
  11. • Butter 2tbsp
  12. • Pineapples 1slice
  13. • Big raisins 25g
  14. • Bananas 1
  15. • Dates 50g
  16. • Sugar 1tbsp
Method
  • Take a pan and melt the butter. Add the brown sugar and cook till it dissolves. Add the pineapple, raisins, bananas and dates. Cook for a further 2-3 minutes. Grease a mould and sprinkle some sugar. Pour the fruit mixture in the mould; make sure that it is leveled .In a bowl crack open the eggs and add the crushed almonds and sugar. Beat with an electric beater.
  • When the sugar dissolves add the plain flour and baking powder. In the end add the melted butter. Pour the batter into the cake mould and heat in a pre hated oven at 180C for 25-30 minutes. When the cake is done and is golden brown in color remove from the oven and allow it to cool. Turn the mould upside down and serve.
