Ingredients
  1. 2 beefsteak tomatoes
  2. 185 Mozzarella cheese, sliced
  3. 1 small purple onion, thinly sliced
  4. Salt and pepper
  5. 60 ml extra virgin olive oil
  6. 1 tablespoon fresh basil leaves
  7. 1 tablespoon pine nuts
Method
  • Slice the tomatoes and arrange with slices of cheese, on 4 plates. Arrange onion rings on top. Season with salt and pepper, then drizzle oil over the top.
  • Scatter over basil and pine nuts and serve at once.
