Spiced Purée Of Aubergine (Brinjal Bharta) Recipe

3 spring onions
I dessertspoon coriander leaves
2 cloves garlic 2 green chillis
½ teaspoon cummin seeds
2 cartons yoghurt salt to taste
1 tablespoon ghee or oil
Cut the aubergine in half lengthways. Cover with foil and bake in a moderate oven (350° F. — Gas Mark 4) for 40 minutes or until tender. Remove the skin and mash the flesh of the aubergine. Finely mince the onions, coriander leaves, garlic and green chillis and add to the aubergine along with the yoghurt and salt. Heat the ghee or oil in a saucepan and add the mixture. Heat through.
