Get the fishmonger to clean the fish. Skin and re¬move the head and tail. Wash and dry the fish and place in a flat casserole dish. Mince the ginger and chillis very finely. Crush the cloves and cardamons coarsely. Blanch, roast and slice almonds. Put yoghurt in a bowl, beat well and add all the spices, almonds, sugar and salt. Mix and pour over the fish. Bake covered in a moderate oven (350° F. — Gas Mark 4) for about 1 hour.
