Ingredients
  1. Whole spaghetti 500 g
  2. Grated parmesan cheese 4tbsp
  4. Ratatouille Sauce:-
  6. Egg 1
  7. Onion sliced 1 large
  8. Clove garlic 1
  9. Green pepper 1
  10. Zucchini (courgettes) 2
  11. Tomatoes 500 gram
  12. Roughly chopped
  13. Dry white wine 125 ml
  14. Finely dried chopped fresh basil 1tbsp
  15. Dried thyme ½ tbsp
  16. Dried pregano ½ tbsp
  17. Black pepper
Method
  • To make sauce place eggplant, onion garlic, green pepper , zucchini, tomatoes, wine basil thyme and oregano in a non stick frying pan and cook over a low heat or until mixture from a thick sauce
  • Cook spaghetti in a boiling water in a large saucepan following packet direction. Drains spaghetti, spoon sauce over toss to combine and sprinkle with parmesan cheese.
