Ingredients
  1. ½-1 tbsp onion powder
  2. ½-1 tbsp garlic powder
  3. ½-1 tbsp smoked (or plain) paprika
  4. 4 cups plain flour
  5. 2 tspn cayenne
  6. freshly ground pepper
  7. 2 cups buttermilk
  8. 1 tbsp Tabasco
  9. 8 boneless chicken thighs
  10. 2 cups vegetable oil
  11. ½ cup mayonnaise
  12. 2-3 chipotle peppers in Adobo, chopped
  13. Turkish bread, cut into squares & then through the middle
  14. olive oil spray
  15. 4 rashers streaky bacon
  16. inner leaves of 2 cos lettuces
  17. 2 ripe red tomatoes, sliced
Method
  • Combine the onion and garlic powders with the paprika, flour, cayenne and ground pepper. Then split the mixture between two large bowls.
  • In a third bowl, mix the buttermilk with the Tabasco.
  • Dip a chicken thigh into one of the bowls of flour, then in the buttermilk and finally into the fresh bowl of flour until well coated. Repeat the process.
  • Heat the oil in a sauté (or heavy-bottomed deep) pan to about 180°C and fry the chicken until golden brown on both sides, being careful not to over crowd the pan. Then drain on kitchen paper towels.
  • Mix together the mayonnaise and chopped chipotle peppers to taste. Set aside.
  • Cook the bacon with oil sprayed bread on a lightly oiled ridged grill (or BBQ).
  • Then smear the grilled bread with the mayonnaise and top with lettuce, tomato, chicken, bacon and another piece of grilled bread.
