Thinly slice the onions and put them on medium heat with good amount of oil for frying.
Meanwhile put almonds in water and put them in microwave for 5 min and peel them.
Add little water in ginger and garlic and grind them but preferably they should be crushed in pestle and mortar.
When onion are nice and brown;leave 1/5 of them in the pot and remove the rest and spread them in a dish so that they get crunchy.
Add chicken and also ginger n garlic in the pot and roast them.
Let chicken release its water, cook it nicely until the water evaporates.
Meanwhile grind the fried onions with little yogurt and mix it with the rest of the yogurt; its better to crush them by hand and then add in the yogurt, as the actual beauty of qormah is in adding crushed fried onions.
When water dries in the chicken add all of the spices and saffron.
Split the dried date length wise and add to the qormah. if you wish you can add 2 of them.
Cook and roast the chicken well with all the spices.
Add peeled almonds.
When it starts sticking to the bottom, releases its aroma, chicken gets tender and oil is separated add yogurt and onion mix.
Cook until oil separates and in the last add kewra water,don't add too much otherwise it will give very strong flavor.
Check if qormah looks thick as Greek yogurt is thick so may need to add 1/4 cup water but if you are using other yogurt; it may release a lot of water so there may not be any need to add water.
If water is added let the gravy of qormah boil for2-4 min.
