Put the tomatoes in a howl. Pour boiling water over them and leave for 20 seconds. Peel and mash the tomatoes to a purée. Boil the peas and add to the purée. Finely mince the ginger and chillis and add to the tomatoes and peas. Heat some oil in a pan, add the tomatoes and peas and cook for 15 minutes over a low heat. Sprinkle with the garam masala and serve with plain boiled rice and papadoms.
