Ingredients
  1. Mutton ½ kg
    Rice300 gm
    Green chilies4 – 5
    Onion2
    Garlic 4 cloves
    Star anise6
    Plum100 gm
    Fennel seeds2 tbsp
    Coriander seeds2 tbsp
    Mix whole spicesas required
    Turmeric1 tbsp
    Saffron1 small packet
    Saltto taste
    Ghee½ cup
    Muslin clothas required
    Water1 ½ – 2 glass
Method
  • Heat ½ cup ghee in a pan, add 4 cloves of chopped garlic and 2 chopped onion. Sauté until golden brown.
    Then add ½ kg mutton, fry well till its color is changed.
    Now make a spice bag with 2 tbsp coriander seeds and 2 tbsp fennel seeds. Add to the pan with 1 tbsp turmeric, salt to taste and mix whole spices as required.
    Fry well for 1 – 2 minutes. Now add 2 glasses of water, cover and cook for 25 – 30 minutes till meat is tender.
    Add 300 gm soaked rice and 4 – 5 green chilies.
    Cook till rice starts coming on top. Lastly add 100 gm dry plums, 1 small packet of saffron and mix well.
    Simmer on low flame for 8 – 10 minutes. Dish it out and serve hot.

Yesterday I eat Zaffrani chicken pulao according to the recipe of Chef Zakir in my friend's home. It such a delicious dish which every one like that is why I am noting the recipe of it.
