Ingredients
  1. 500 grams mutton chops
  2. 2 medium-sized potatoes (peeled)
  3. oil or ghee for frying
  4. 3 medium-sized onions
  5. 1 piece ginger
  6. 8 flakes garlic
  7. 1 tblsp poppy-seeds
  8. 1/2 cup ghee
  9. a little milk
  10. 1/2 tsp turmeric powder
  11. 1 tblsp each of garam masala, powdered cumin find coriander seeds
  12. a large pinch each of nutmeg and mace
  13. 6 red chillies
  14. salt to taste
  15. 250 grams tomatoes (blanch¬ed and sliced)
  16. 2 hard-boiled eggs (shelled and quartered)
  17. a few sprigs coriander leaves (chopped)
Method
  • Boil the potatoes and cut into thin, long fingers. Deep fry to a rich golden color. Grind the onions, ginger, garlic and poppy-seeds to a paste. Heat the ghee and fry the paste, sprinkling a little milk now and then till the ghee floats to the top. Now add the mutton and fry to a red color. Mix in all the spices and salt, along with the tomatoes. Cover with hot water and cook till the mutton is done. Now stir in the potatoes and cook for a few more minutes. Serve hot, .garnished with eggs and coriander leaves.
