Ingredients
  1. onion 1 large
  2. 1 whole medium size garlic
  3. salt 1 tsp
  4. red chili powder 1 tsp
  5. coriander powder 1 tsp
  6. cumin seeds 1 tsp
  7. turmeric 1/3 tsp
  8. For 10 kg Mutton:
  9. 10 large onions
  10. 10 whole medium garlic (lehsan)
  11. salt 10 tsp
  12. chili(lal mirch) powder 10 tsp
  13. coriander(dhania) powder 10 tsp
  14. cumin seeds(sabat zeera) 10 tsp
  15. turmeric(haldi) 3 tsp
Method
  • Put meat in the pot and add all the spices, onion and garlic.
  • Don't add water.
  • For 1 kg meat, keep flame on medium to low heat and let it cook covered.
  • For making 10 kg meat, cook in a bigger pot, without cover and on a high heat because 10 kg meat will release a lot of water and meat will be soaked in water; if it will be cooked on medium to low heat meat will get too tender till the water is dried up.
  • After some time the onion and garlic will be dissolved.
  • Divide meat equally in 1/2 kg or 1kg portions in the storage boxes, and divide the remaining gravy equally to all the boxes.
  • When made for 10kg, a lot of gravy will be left so divide it equally in all the boxes.
  • Let it cool down completely and then cover the lid and freeze the containers.
  • When you want to cook:
  • Defrost the meat container.
  • For 1/2 kg meat - add 1 medium tomato and oil and roast the meat nicely..
  • For 1 kg meat - add 2 medium tomatoes and oil and roast it..
  • For meat with cauliflower - add tomato,oil and crushed black pepper & ginger then add cauliflower, green chilies,fresh coriander and meat with cauliflower is ready.
  • For meat curry - add tomato+oil and roast it well and then add kasuri methi, ginger; when oil separates then add little water for gravy and then add green chilies and fresh coriander and then sliced full boiled eggs as garnish, tasty meat curry wil be ready.
  • For making meat with spinach - add oil & tomato and roast it; then add spinach and put on low flame and cook covered after some time open lid and it will be ready.
  • For preparing meat with okra - add oil and tomato and roast it and then add fried okra, green chilies,fresh onions and green coriander and put on low flame and cook covered and meat with okra is ready.
  • For meat curry with bitter gourd - add tomato and oil and roast the meat,then add fried bitter gourd,green chilies,green coriander and onions and tasty meat curry with bitter gourd will be ready.
  • This is good for students and working people who are living away from their homes .. meat containers can be prepared and given to them.. they can add some vegetables in it and then cook daily meal for themselves.
  • IMPORTANT NOTES:
  • This recipe is the base of almost all of the meat curries.
  • This recipe can be used to prepare 10, 15 or even 20 kg meat and put in the freezer for later use.
  • Good for students or those who cannot cook every day so they can make it in advance and freeze it for later use.
