Heat the milk in a saucepan .When the milk begins to boil add the soaked rice and allow to cook
Ina separate pan add 1/2cup sugar and allow it to caramelize. Once the color changes into a golden brown spread the caramelized sugar onto a tray
When the rice is fully cooked add 3tbsp of sugar and 1/2cup fresh cream. Mix well and cook till the mixture thickens
Pour the pudding into serving glasses and allow to cool in the fridge
In the meantime prepare the red jelly with1 tbsp of sugar.
Remove the glasses from the fridge; pour fruit cocktail on top of each glass.
Top with red jelly cubes and the caramel .Keep the glasses back in the fridge.
