  1. 4 tbsp cocoa
  2. 4 tbsp hot water
  3. 8 oz butter
  4. 8 oz caster sugar
  5. 4 eggs
  6. 10 oz self raising flour
  7. 2 tsp baking powder
  8. 1 tbsp milk
  9. Icing :
  10. 4 tbsp apricot jam
  11. 5 oz chocolate
  12. 12 oz icing sugar, sifted
  13. 1 tsp oil
  14. Grated chocolate, to decorate
Method
  • Blend cocoa and water the let cool.
  • Beat butter, caster sugar, add eggs, fold in flour and baking powder, milk, pour in a greased and lined 12 x 9 inch tin and bake at 180 degrees C for 30 minutes or till a skewer inserted in centre comes out clean.
  • Cool for the icing, warm the apricot jam and apply on the cake using a brush.
  • Melt chocolate and allow to cool slightly, beat in icing sugar and oil, if needed a tbsp or two of milk can be added.
  • Pour icing over cake and smooth with a spatula or palette knife.
  • Set for one hour and then cut in squares and decorate with grated chocolate.
