Ingredients
  1. 1) 2 tbsp Dry sherry
  2. 2) 4 Green (spring) onions, chopped
  3. 3) 1 Piece of root ginger, shredded
  4. 4) 500gm Chicken, cut into 1 inch strips
  5. 5) 2 Celery sticks, sliced
  6. 6) 125gm Button mushrooms, quartered
  7. 7) 1 Green pepper, cored, seeded and sliced
  8. 8) 2 tbsp Light soy sauce
  9. 9) Shredded rind of 2 lemons
  10. 10) A few Lemon slices, for garnish
  11. 11) 2 tbsp Oil, for stir-frying
Method
  • 1. Put the sherry, spring onions and ginger in a bowl.
  • 2. Add chicken and toss well to coat. Leave to marinate in the bowl for 15 minutes.
  • 3. Heat the oil in a wok or frying pan.
  • 4. Add celery, mushrooms and the green pepper. Stir-fry for one minute.
  • 5. Add the chicken and marinade and cook for 3 minutes.
  • 6. Stir in the soy sauce and lemon rind. Cook for one minute.
  • 7. Garnish with lemon slices and serve hot.
  • 8. Chinese Lemon Chicken is ready.
