INGREDIENTS

3 cups of Carrots (Gaajar) (grated)
2 cups All-Purpose Flour (Maida)
2 cups Sugar
2 tsp. Baking Soda
1 tsp. Salt
2 tsp. Cinnamon Powder (Dal Cheeni Powder)
1 tsp. Vanilla Extract
4 Eggs
1 ½ cup Vegetable Oil

For Frosting:
8 ounces of Cream Cheese
1 tbsp. Vanilla Extract
1 stick of Butter (Makhan)
1 pound of Powdered Sugar
Walnuts (Akhrot) (to your preferance)
Rind Of An Orange

METHOD

For Cake:
Sift dry ingredients into a mixing bowl. Mix in grated carrots, vanilla and eggs. Beat, and add oil slowly.

Pour into a buttered 8"x12" pan, or two 8" diameter round pans. Bake at 325 degrees for 35-45 minutes or until the center is done. And let cool.

For Frosting:
Beat cream cheese by adding butter, orange rind, and vanilla. Add powdered sugar and continue beating.

Frost cake with frosting before serving.
