To make bread pudding whisk eggs, add pumpkin, milk, cream, sugar, cinnamon, salt, nutmeg and vanilla extract and mix well. Cover with cling wrap and chill in fridge for at least 5 hours.
Preheat oven to 200 degrees Celsius. Lightly grease ramekins, and fi bread mixture.
Place on a baking sheet and bake for 50 minutes, and cover with foil after 30 minutes.
During the last 15 minutes of baking prepare Caramel and Pecan sauce. In small saucepan mix pecans, brown sugar, butter, corn syrup, cinnamon and vanilla extract. Cook the mixture for 3 to 5 minute, or until the sugars is fully dissolved.
During the last 5 minutes of baking, remove the ramekins from over, drizzle with sauce and bake.
