Ingredients
  1. 4 oz. plain flour
  2. 1 tablespoon melted butter water to mix
  3. cloves
  4. oil for deep frying
  5. 2 pints (U.S. 5 cups) milk 4 oz. sugar
  6. 2 oz. raisins, soaked in water 2 oz. almonds
  7. 1 tablespoon coconut
  8. 2 oz. each pistachio and hazelnuts 10 cardamom seeds, crushed
Method
  • Sieve flour into a bowl. Add melted butter and sufficient water to make a soft dough. Divide and shape the dough into walnut-sized balls. Stick a clove in each ball. Heat the oil and deep fry each ball until the underside puffs up. Turn over and cook on the other side. Drain when golden brown. Boil the milk in a large pan until half the milk has evaporated (about 30 minutes). Add the sugar and cool. Add the puffs, strained raisins, and remaining ingredients. Serve when puffs are quite soft.
