INGREDIENTS

Four 185 g (6 oz) fillet steaks
mixed salad leaves
cherry tomatoes, to garnish
MARINADE:
60 ml (2 fl oz/ ¼ cup) sunflower oil 2 tablespoons red wine vinegar I tablespoon tomato purée (paste) 2 teaspoons Worcestershire sauce 1 teaspoon Dijon mustard
I clove garlic, crushed
½ teaspoon paprika
salt and pepper
AVOCADO DRESSING:
1 ripe avocado
juice of 1 lemon
60 ml (2 fl 07.11/4 cup) virgin olive oil
1 clove garlic, crushed
60 ml (2 fl oz/ ¼ cup) single (light) cream

METHOD

To make the marinade, put all the ingredients into a dish and mix together. Add the steaks, turn to coat then leave for 1 hour.
To make the dressing, halve the avocado, remove stone and scoop out flesh. Place in blender or food processor with remaining ingredients and work until smooth. Season with salt and pepper.
Arrange salad leaves on 4 plates. Either cook steaks on a barbecue or under a hot grill for 6-8 minutes, turning them once. Transfer cooked steaks to a board, slice them into strips and arrange on the plates. Spoon over dressing. Serve garnished with cherry tomatoes.
