Ingredients
  1. 4 ounce Softened butter
    4 ounce Brown sugar
    4 ounce Self raising flour
    2 Eggs
    1 mashed Banana
    1/2 tsp Vanilla essence
    For Topping4 ounce Butter
    4 ounce Condensed milk
    2 ounce Caster sugar
    1 tbsp Golden syrup
Method
  • Preheat oven to 190 degree C
    Beat 4 ounce butter and 4 ounce sugar until light and fluffy, add in the 2 eggs alternating with 4 ounce self rising flour. Beat until mixture is smooth
    Fold in 1 mashed banana and 1/2 tsp essence.
    Divide the mixture between paper cases. Bake in the centre of the oven for 15 minutes, remove and cool on wire rack.
    For ToppingMelt 4 ounce butter for 30 seconds, stir in the 4 ounce condensed milk, 2 ounce caster sugar and 1 tbsp golden syrup. Cook the topping, string all the time till thick slightly.
    Spread over the cup cake, scatter chocolate sprinkle on top
