Ingredients
  1. • 8 oz. potatoes
  2. • 4 oz. carrots
  3. • 4 oz. turnip
  4. • 4 oz. runner beans 4 oz. shelled peas
  5. • 1 large onion, sliced finely oil for frying
  6. • 1 clove garlic
  7. • 1 tablespoon ground coriander seeds
  8. • 1 ½ teaspoons chilli powder
  9. • 1 teaspoon turmeric powder
  10. • 1 teaspoon ground ginger
  11. • ½ teaspoon ground cummin seeds
  12. • ½ teaspoon ground mustard seeds
  13. • 2 ¼ oz. can tomato purée water to mix
  14. • ½ oz. creamed coconut
  15. • salt to taste
  16. • squeeze of lemon juice
Method
  • Chop the potatoes, carrots, turnip and beans, par¬boil with peas. Now fry the onion in a little oil and when golden brown add the garlic. After a minute or two add all the spices and fry briskly. Add the tomato purée and a little water to make a thick gravy. Lower the heat, cover the pan and simmer gently for 20 minutes. Add the creamed coconut, vegetables and salt and cook till vegetables are tender. Add lemon juice to taste.
