Ingredients
  1. 2 lb. tomatoes or
  2. 28 oz. can peeled tomatoes, drained
  3. 1-inch fresh root ginger
  4. 3 green chillis
  5. 1 large onion
  6. 2 cloves garlic oil for frying
  7. 1 rounded teaspoon mustard seeds
  8. Sprig of curry leaves or
  9. 2 bay leaves
  10. 2 tablespoons desiccated coconut, soaked in
  11. 4 tablespoons water
  12. ¾ teaspoon chilli powder
  13. 1 tablespoon ground coriander
  14. 1 teaspoon turmeric powder
  15. Salt to taste
Method
  • Chop half the tomatoes; mince the ginger and green chillis finely, slice the onion and crush the garlic. Heat a little oil in a pan and fry the mustard seeds and curry leaves until the seeds splutter. Add the onion, chopped tomatoes, ginger and chillis. When the onion browns add the strained coconut milk, garlic, chilli powder, coriander, turmeric and salt. Cook gently for 45 minutes. Add the remaining tomatoes 15 minutes before the end of cooking time. Serve with rice.
