Ingredients
  1. Oil for frying
  2. 1 large onion
  3. 3 cloves garlic
  4. 1 ½ -inch fresh root ginger
  5. 3 green chillis oil for frying
  6. 1 ½ lb. tomatoes, skinned and chopped
  7. 1 heaped tablespoon desiccated coconut
  8. Salt to taste
Method
  • Mince or finely chop the onion, garlic, ginger and chiIlis. Heat a little oil in a pan and fry the onion gently for about five minutes, add the garlic, ginger and chillis and fry for a further 3-4 minutes then add the tomatoes and coconut. Season with salt, mix well and simmer for about 15 minutes.
  • Note: Preparation time 5 minutes, Cooking time 25 minutes, To serve 4
