Ingredients
  1. 2 cloves garlic
  2. 3 green chillis
  3. Large bunch of coriander leaves
  4. 2 oz. creamed coconut
  5. 2 teaspoons ground cummin seeds
  6. 1 teaspoon sugar Salt to taste
  7. Juice of 2 lemons
  8. 4 cod steaks
Method
  • Finely mince the garlic, chillis and coriander leaves, then mix with the coconut, cummin, sugar, salt and lemon juice to make a paste. Clean and wash the fish, rub with salt and set aside for 10 minutes. Now coat the fish on both sides with the paste, put in a baking dish, cover with foil and bake in a moderat¬ely hot oven (375° F. — Gas Mark 5) for 20-25 minutes. Serve with sliced tomatoes.
