Ingredients
  1. 375 g (12 oz/2 cups) dried chick-peas, soaked overnight
  2. 2 tablespoons chopped fresh coriander and coriander sprigs, to garnish
  3. CORIANDER DRESSING:
  4. 3 tablespoons olive oil
  5. 1 small onion, chopped
  6. 1 green chilli, seeded and finely chopped
  7. 1 clove garlic, finely chopped
  8. 2 teaspoons ground coriander
  9. 1 teaspoon ground cumin
  10. 1 teaspoon turmeric
  11. salt and pepper
  12. 2 tablespoons natural yogurt
Method
  • Drain chick-peas from soaking water and put into a saucepan with fresh water. Bring to the boil, and simmer for 1 hour or until tender.
  • Meanwhile, make the dressing. Heat oil in a small frying pan, add onion, chilli and garlic and cook for 2-3 minutes. Stir in spices and cook for 1 minute. Season to taste with salt and pepper. Turn into a large bowl and stir in the yogurt.
  • Drain chick-peas, cool briefly then remove skins while still wan-n. Add to spice mixture and mix well. Leave to marinate for at least 2 hours. Serve garnished with the coriander.
