Ingredients
  1. Pastry for 1 crust 9 inch pie
  2. 1/3 cup sugar
  3. 1 Tablespoon cornstarch
  4. 1 8-1/4 can crushed pineapple, undrained
  5. 1 8 oz. pkg. cream cheese, softened
  6. 1/2 cup sugar
  7. 1/2 teaspoon salt
  8. 2 eggs
  9. 1/2 cup milk
  10. 1/2 teaspoon vanilla
  11. 1/4 cup pecans
Method
  • 1. On a lightly floured surface, roll pastry to 12 inch circle.
  • 2. Place in 9 inch pie plate. Turn edge under; flute.
  • 3. Combine sugar and cornstarch in a saucepan. Stir in pineapple. Cook, stirring constantly until mixture is clear and thickened. Cool.
  • 4. Spread onto bottom of pastry shell.
  • 5. Combine cream cheese, sugar and salt, mixing until well blended.
  • 6. Add eggs, one at a time, mixing well after each addition. Blend in milk and vanilla.
  • 7. Pour over pineapple mixture; sprinkle with pecans.
  • 8. Bake 35 minutes. Cool. Garnish with pineapple slices and maraschino cherries. Keep chilled.
