Ingredients
  1. 250 g (8 oz) orzo (rice-shaped pasta)
  2. 250 g (8 oz) cherry tomatoes, quartered 10 g (1 oz) pine nuts, lightly toasted
  3. basil sprigs, to garnish
  4. PESTO DRESSING:
  5. 30 g (1 oz) fresh basil leaves
  6. 2 cloves garlic, peeled
  7. 30 g ( 1 oz) pine nuts
  8. 3 tablespoons virgin olive oil
  9. 30g (1 oz/1/4 cup) grated Parmesan cheese 3 tablespoons single (light) cream
Method
  • Cook pasta in boiling salted water until just tender. Drain, rinse under cold water and drain again. Put into a bowl with the tomatoes.
  • To make the dressing, wash and dry basil leaves, then put into a blender or food processor with garlic, pine nuts and oil and work until smooth. Turn into a bowl, and heat in Parmesan cheese and cream. Stir into the pasta, then transfer to a serving dish. Serve the salad sprinkled with toasted pine nuts and garnished with a few sprigs of basil.
