Ingredients
  1. 1) Shrimps, de-veined 600 gms
  2. 2) Turmeric powder 10 gms
  3. 3) Olive oil 3 tbsp
  4. 4) Garlic chopped 30 gms
  5. 5) Onion chopped 100 gms
  6. 6) Thai lemon leaves, shredded 6-7
  7. 7) Ginger, julienned 20 gms
  8. 8) Light oyster sauce 1 tbsp
  9. 9) Baby spinach 500 gms
  10. 10) Australian sweet potato 400 gms
  11. 11) Pepper and salt to taste
Method
  • 1. Season shrimps with turmeric, salt and pepper.
  • 2. Separately, saute garlic in 2 tbsp olive oil until golden brown.
  • 3. Add 50 gms onion, lemon leaves and ginger.
  • 4. Saute for about 2-3 minutes.
  • 5. Add shrimp. Cook till shrimp is tender.
  • 6. Adjust seasoning. Keep aside.
  • 7. Saute 50 gms onion in remaining olive oil till translucent.
  • 8. Add spinach and toss well.
  • 9. Spoon it out on a platter and place shrimps on top.
  • 10. Serve with pureed sweet potato.
