Ingredients
  1. Butter 4 ounces softened
    Orange juice 1 tbsp
    Rose water 1 tbsp
    Caster sugar ½ cup
    Eggs 2
    Self raising flour 1 cup
    Almonds meal ¼ cup
    Milk ½ cup
    Orange blossom cake icing
    Icing sugar 1 cup
    Butter softened 1 tsp
    Orange jelly crystals 1 tbsp
    Rose water 1 tbsp
    Water if required 1 tbsp
Method
  • Preheat oven to 180 degree, grease 6 whole mini fluted tube pan, beat butter orange juice, rose water and sugar until light and fluffy, beat in eggs 1 at a time (mixture will curdle) stir in sifted flour, almonds meal and milk in two batches. Divide mixture in pan holes, bake about 25 minutes, and let cake cool in the pan for 5 minutes before turning onto wire rack. Drizzle icing over cakes.
    Method for orange blossom glazed icing
    Sift icing sugar into heat proof bowl, stir in butter, orange jelly crystal, rose water and enough water to make a firm paste, stir over small sauce pan of simmering water until icing is pourable.
