Ingredients
  1. Salt to taste
  2. 3 tablespoon yogurt
  3. 2 green chillies
  4. 1 small piece of ginger
  5. 4 garlic cloves
  6. 1 teaspoon red chilli powder
  7. 1/2 teaspoon turmeric powder
  8. 1/2 teaspoon coriander powder
  9. 1 teaspoon chaat masala
  10. 1 teaspoon garam masala
  11. 1 teaspoon lemon juice
  12. 1/2 teaspoon roasted cumin powder
  13. 1/4 teaspoon green cardamom powder
  14. 1 tablespoon cream
  15. 1 tablespoon olive oil
  16. Pinch of orange red food color
  17. 1/4 tsp meat tenderizer
  18. To serve with
  19. Mint or coriander chutney
  20. Onion rings
Method
  • -Blend the ingredients well to make a nice and smooth marinade except tenderizer.
  • -Marinade the chunks of mutton and let it rest at least for 4 hours in a zip lock bag in the fridge.
  • -Rub the tenderizer well on all pieces about 15 minutes before grilling.
  • -preheat the oven to 160 C or 325 F
  • -Skewer the pieces of mutton and place them on a grilling tray covered with silver foil.
  • -To avoid burning, the mutton pieces should hang and not touch the tray.
  • -Mutton tikkas are best made on a slow grill, so place the mutton and the tray in the upper shelves of your grill.
  • -Baste the tikkas with butter after 45 minutes and turn the skewers.
  • -Increase the temperature to 200 C or 400 F after 75 minutes.
  • -Your tikkas should be ready in about 90 minutes of total grilling time.
  • -Unskew the tikkas and sprinkle some chaat masala on the tikkas.
  • -Serve with thinly sliced onions and mint or coriander chutney.
