Ingredients
  1. mushrooms, as desired
  2. onion(s), as desired
  3. pepper, bell, any color, as desired
  4. broccoli florets, as desired
  5. spinach leaves, as desired
  6. 1 spray(s) oil spray, to coat pan
  7. 1 whole pita, mini, 100% whole wheat, or whole-grain tortilla or whole-grain English muffin
  8. 2 tablespoon marinara sauce, up to 4 tablespoons, to taste
  9. 1/4 cup(s) cheese, mozzarella, part-skim, shredded
  10. oregano, (optional)
  11. pepper, red flakes, optional
Method
  • Saute desired veggies in a skillet coated with oil spray over medium heat until tender-crisp, about 5 minutes.
  • Toast the pita, tortilla, or English muffin in 425 degree oven (or toaster oven) until lightly browned and crispy. (If using an English muffin, split the muffin and toast the two halves.)
  • Spread the marinara sauce over the toasted “crust,” all the way to the edges to prevent burning.
  • Sprinkle on the cheese and top with the sauteed veggies. Place back in the oven or toaster oven and bake until the cheese is melted and bubbly, 5 to 10 minutes.
  • Sprinkle with oregano and/or crushed red pepper flakes if desired.
